MICHELIN vs Gault&Millau: How the Guides Differ

MICHELIN Stars and Gault&Millau toques both recognise cooking, but they use different systems. Here's how to understand the distinctions without confusing them.

Two different perspectives on great cooking

MICHELIN and Gault&Millau are independent gastronomic guides. MICHELIN emerged from a motorist's travel resource in 1900, while Gault&Millau developed from food journalism in the 1960s. Both take cooking seriously, but their symbols and traditions differ.

A restaurant may feature in both guides. That does not mean a certain MICHELIN Star level is equivalent to a particular number of Gault&Millau toques. Their assessments should be presented separately.

Stars and toques are not interchangeable

MICHELIN awards one, two or three Stars for outstanding cooking and also maintains distinct Green Star, Bib Gourmand and Selected categories. Its five criteria cover ingredients, technique, flavour harmony, culinary personality and consistency. See the MICHELIN definitions. How MICHELIN Stars work explains the criteria in detail.

Gault&Millau uses scores out of 20, represented by one to five toques internationally. Special individual or sustainability awards in Türkiye sit outside those classifications. The official scoring table details the ranges. See how Gault&Millau toques work for the score ranges.

Why do the date and exact category matter?

The year printed on a guide can differ from the year of its ceremony. Türkiye's MICHELIN 2026 selection was announced on 4 December 2025; Gault&Millau's 2026 awards followed on 8 December 2025. Both are 2026 editions with ceremonies in 2025.

A Star, a Selected listing and an award received by a restaurant employee are three different achievements. Correct award names, recipients, guide editions and source links make editorial reporting much more reliable.

What awards mean for the guest journey

Recognition offers operators a reason to review how they describe their culinary identity and service. A kitchen's award and the accuracy of booking details, table readiness and guest welcome remain different responsibilities.

Rezervem Manager helps teams manage reservations, floor plans and guest records together. Its operational role is entirely separate from both guides' award decisions.
